Haidilao is a chain of hot pot restaurants founded in Sichuan, and the new location in Seattle’s Pacific Place Mall is one of the few Haidilaos in the U.S. Broth flavors range from chicken and pork bone to hot and sour pickles and come with plenty of meats, vegetables, and seafood for dunking. They’re open for dine-in service as well as takeout.
