We once read an ancient proverb that roughly translated to: If you can see Iberico ham hanging as you walk into a place, you’re in for a good night. And while we may or may not have made that up, EDO Gastro Tapas and Wine is the restaurant that proves it. Any dish at this Spring Valley spot with that Iberico is a must, along with a few things from the long cocktail and wine lists, though there’s also a $45 tapas tasting menu that’s an absolute steal.
